Has he asked you out already? If so, have you told him no? If you have but he persists, have a discussion with the store manager and explain how his behavior is affecting your desire to shop there. If he hasn't asked yet, keep it polite, but distant. If he still hasn't gotten the hint and asks you out, simply say that you are not interested.
